There is no lack of dispute when it comes to the origin of Carbonara…
Some say that the owners of this dish were shepherds and other hard working people. It is said that they humbly put eggs and pecorino in their spaghetti.
Others claim that this dish was eaten first by coal miners, and the name ‘carbonara’ explains how the black pepper resembled coal dust.
There is also a deeper and older legend of this recipe appearing in historical cookbooks such as “Il cuoco galante” by Neapolitan Vincenzo Corrado, printed in 1773.
We can sit here all day and dispute the history, but at this point, the only thing that really matters is that it’s absolutely delicious. Let's skip the drama and get cooking!
