About The Experience

90 minutes* | Sarah’s Signature Aperol Spritz Mixer

Sip on Sarah’s signature cocktail and enjoy a special live musical performance while you learn to make Cacio e Pepe Ravioli from start to finish! First, we’ll show you all the techniques to make fresh pasta dough from scratch, using a combination of semolina and 00 flour for a rustic yet delicate dough and kneading it to smooth, silky perfection. Then, we’ll roll the dough paper-thin, stuff it with a fresh ricotta, Black Truffle, and Balinese Truffle Salt farce, and teach you how to fold ravioli that would even impress the most serious Italian nonnas! Finally, we’ll show you how to make a classic Cacio e Pepe sauce with Kampot Peppercorns, 24 month-aged Parmesan cheese, and our world famous Truffle Carpaccio. You’re sure to learn a ton of new skills and make something truly delicious in this very hands-on cooking class!
