For the Focaccia
100 grams (½ cup) sourdough starter
1 pack of active dry yeast
650 grams (2¼ cups) bread flour
420 grams (1¾ cup) water
120 grams (½ cup) olive oil
20 grams (5 teaspoons) kosher salt
10 grams (2 teaspoons) sugar
1 bunch rosemary
1 onion
28 grams parmesan cheese
For the Soup
1 medium butternut squash
2-3 tablespoons olive oil
Pinch Balinese Truffle Salt
1 large onion
1 bundle sage
4 cloves garlic
4 tablespoons butter
¼ teaspoon fresh nutmeg
½ teaspoon cinnamon
3 cups chicken broth
5 oz creme fraiche
Splash of balsamic vinegar
1 oz parmesan cheese
Pumpkin seeds & dried cranberries to garnish
Serving Size: 4 hungry chefs

📝 Homework: This recipe requires you to do homework on roasting the squash and to make the Foccacia sponge 2 hours prior to the class.
