The Chef Jeremy Show

Mille Feuille or “1000 layer” pastry is a classic french dessert that is to die for. It is layers of butter flakey puff pastry topped with cream and jam. My recipe for this is inspired by baklava with a honey, walnut filling that is just to die for. I originally created the dish while I was in pastry school for an end of the year exam and I can’t wait to share it with you!!

Class duration: 120-minute experience, plus making the puff pastry one day before the class (2-hour homework)

If you want to add some extra pizzaz to you final dish, I recommend a little gold luster dust or gold leaf to give the plate a final kiss. Here is an example to consider.

450 grams (2 cups) heavy cream
100 grams (⅓ cup) honey

Baklava Filling
113 grams (½ cup) unsalted butter
100 grams (½ cup) brown sugar
100 grams (⅓ cup) honey
3 egg yolks
225 grams (1 cup) heavy cream
5 grams (1 teaspoon) vanilla extract
125 grams (1 cup) chopped walnuts
25 grams (¼ cup) chopped pistachios

Garnish
Extra honey
Freeze dried raspberries
Lime zest
