Tagliatelle Pasta Carbonara On-Demand Class

Welcome to your On-Demand culinary experience! In this video, Truffle Shuffle Founder Chef Jason will walk you through each step to make tagliatelle from scratch, along with a luxurious truffle and fresh lemon carbonara sauce.   • Roll out your dough to be as thin as possible. The dough will absorb water as it boils, so a thin, delicate dough will make the resulting texture more pleasant. 
  • Kneading is a crucial step to developing the gluten in your pasta dough. Make sure to take your time and knead until smooth and silky (and no need to worry about over kneading your dough, especially if you’re kneading by hand). 
  • Knife maintenance is huge—you always want your knife arsenal to be well-sharpened. Use a honing steel between sharpening. We recommend a whetstone or oil-based stone for sharpening. Or, you can take them to a professional knife shop (we love Bernal Cutlery). Believe it or not, you're more likely to injure yourself on a dull knife than a sharp one!
  • The kale and lemon zest add a nice freshness to a traditional carbonara sauce here, but feel free to get creative with other greens you have on-hand. A handful of spicy arugula or spring peas would be delicious additions!

Jason McKinney got his start as a Chef de Tournant at the Sea Island Resort in his home state of Georgia. He went on to eventually secure a position as Chef de Partie and poissonnier at Thomas Keller’s three Michelin-starred The French Laundry in Napa, California, during which time he was awarded Chef of the Year. From a family of self-starters, Jason always desired to start something of his own. He, along with fellow Laundry alumni Chef Tyler and Sarah, founded Truffle Shuffle with the dream of bringing fresh truffles, access, and education to households across the country. Since then, they’ve been on a mission to share their expansive knowledge with the Truffle Shuffle family, arming curious home cooks with all the skills and techniques to cook like professional chefs in their own kitchens. They maintain a firm commitment to give back to the community through Truffle Shuffle, donating a portion of each sale to feed a family in need.
