Steak Frites, Truffle, and a Flambeed Sauce Diane On-Demand Class

Welcome to your On-Demand culinary experience! In this video, Chef Tucker will walk you through each step to make crispy, Balinese Truffle Salt-seasoned fries, along with a classic Sauce Diane. Finally, they'll show you all the techniques for expertly pan-searing an absolutely delicious steak.   • Always rest your meat! It's important to allow meat and fish to come to room temperature just before searing to ensure it's an even temperature throughout. Otherwise, you the internal temperature will remain too low and you'll be forced to over cook it. 
  • Make sure to pat your steak very dry with paper towels. A lack of moisture helps it get that nice, crispy golden brown crust. 
  • Knife maintenance is huge—you always want your knife arsenal to be well-sharpened. Use a honing steel between sharpening. We recommend a whetstone or oil-based stone for sharpening. Or, you can take them to a professional knife shop (we love Bernal Cutlery). Believe it or not, you're more likely to injure yourself on a dull knife than a sharp one!
  • If it's your first time flambeeing, use just small amount of alcohol to start (and always tie up your hair!).

After graduating with a double bachelor’s degree, Chef Tucker decided to pursue becoming a Chef and received formal culinary education from Le Cordon Bleu. Aside from her Nonna, Chef Tucker credits her culinary skills to Chef Suzette Gresham, who mentored her from Butcher to Sous Chef at her Michelin-starred restaurant Aquerello. Chef Tucker loves sharing her passion for food (and truffles!) with her Truffle Shuffle guests. In passing on the tips and tricks she’s learned from her years in kitchens, she hopes to give her guests the tools to cook like professional chefs at home.
