Sarah will also be making a Tokyo Tea and giving her recommendation for the perfect sake pairing!

This class will be taught by Truffle Shuffle founders Tyler, Jason, and Sarah who all met working together at the French Laundry. Click here to learn more about how they started their business and pivoted to teaching live cooking classes in 2020.

Matcha Tokyo Tea

A not-so-distant cousin of the Long Island Iced Tea, the Tokyo Tea focuses on green melon liqueur alongside a wide array of spirits and citrus. The world’s most popular melon liqueur is Midori, which hails from Japan and is made from neutral grain spirits, Japanese muskmelons, and the cantaloupe-like yubari fruit.

Sake & Wine Notes

With Sake, I find the most difficult part of choosing the ideal bottle is not knowing what certain terms translate to. Many terms relating to sake stem from the degree of polishing/milling of the rice grains. Within all of this, type of rice used, and type of water used are more indicative of what the end flavor profile will be. The rice we will be cooking for our sushi rolls is Koshihikari, this grain can also be made into sake. Check out my Sake Notes by clicking the link below to learn more!

Meet Your Chefs!

TYLER, JASON & SARAH

Co-Founders

While working in the best Michelin Star restaurant kitchens, including The French Laundry, Chefs Jason McKinney and Tyler Vorce loved incorporating truffles into their dishes. Sarah, who worked the front of the house at TFL, shared the Chef's love of truffles. Together, they were in awe of how one dish, made with fresh truffles and a few simple ingredients, could create special, ever-lasting memories for diners.
