Mexican Rice

Be it fish, chicken, beef, or beans, Chef Alejandro's flavorful rice is the perfect accompaniment to any protein and comes together in under 30 minutes.
Ingredients 🍲
1 clove garlic, peeled and thinly sliced
3 tablespoons canola oil
1 14 ounce can diced tomatoes
1 cup jasmine rice
Directions 📝
1. In a large pot on medium-low heat, stir together the garlic with and canola oil until the garlic has softened.
2. Add the rice and toast, stirring occasionally, until fragrant and lightly browned, about 3 minutes.
3. Stir the tomatoes and with ¾ cup water. Turn the heat to low, cover, and allow to gently simmer for 20 minutes.
4. Taste your rice. If it’s still a bit crunchy, add a splash more water and continue to cook until tender. When it’s cooked to your desired tenderness, remove from heat and fluff with a fork.
