Chef Tucker's Bacon Jam

Leave it to Chef Tuck to make already irresistible bacon that much more delicious. Gently caramelized onions slowly stew with spices, salty bacon, funky truffle honey and flambéed whisky until nice and jammy for a spread that can only be described as addictive!
This perfectly sweet and salty bacon jam is a condiment to change your life forever: grilled cheeses have met their match, your cheeseboard has finally found what's been missing this whole time, and your hamburgers will never be the same!
Ingredients 🍲
1 tablespoon canola oil
1 garlic clove, minced
1 yellow onion, thinly sliced
2 ounces bacon (ideally uncut slab bacon, but anything you have will work), cubed
Balinese Truffle Salt (or substitute kosher)
1 teaspoon red chili flakes
1 teaspoon smoked paprika
1 teaspoon Aleppo pepper (or chili powder)
1 teaspoon black pepper
¼ cup Madeira, Cognac, or whiskey
6 tablespoons Brown Butter Truffle Honey (or substitute standard honey)
2 tablespoons sherry vinegar
Directions 📝
Heat a medium saute pan over medium-low heat. Add the canola oil and bacon, stirring as you allow the bacon to carmelize. When it begins to crisp up and its fat has started to render, add the onion and a pinch of Balinese Truffle Salt.
Continue stirring until the onions are nearly caramelized, then add the garlic and stir until fragrant (but not browned).
Add the red chili flakes, smoked paprika, Aleppo pepper, and black pepper and stir until fragrant.
Add the alcohol, stir to deglaze, and take the pan off the heat. Use a lighter to flambé until the pan is au sec, or nearly dry.
Return the pan to medium heat and stir in the honey and sherry vinegar. Continue cooking until the mixture has thickened and become jammy.

A Chef's Tip: try adding a healthy pinch of chopped fresh thyme leaves with the spices if you have some on hand!
