Discover the secrets to cooking a tender Wagyu flat iron steak and creating a luxurious wild mushroom cream sauce.

Ingredients 🍲
- 2 American wagyu flat iron steaks
- ½ pound wild mushrooms
- 1 tablespoon canola oil
- 2 tablespoons unsalted butter
- 1 garlic clove
- 3 sprigs thyme
- ⅓ cup cream
- 1 jar Truffle Carpaccio
- Balinese Truffle Salt
- 3 tablespoons of Madeira, Cognac, or Whiskey
- Madeira, cognac, or whiskey

- Large saute pan
- Large spoon
- Tongs

*Just before cooking, take out the steak, remove from the packaging, and allow it to sit at room temperature to temper.*
- Cut the mushrooms into bite-sized pieces.
HOW TO COOK 🍳
Heat a large saute pan over high heat.
- Season the steak with Balinese Truffle Salt.
- Add the canola oil to the pan. Right before the oil begins to smoke, add the steak.
- Cook the steak over high heat, flipping every 30 seconds, until cooked to your desired doneness, about 2-3 minutes for a solid medium rare. If you would like your steak cooked more or less, simply increase or decrease the amount of cooking time.
- Right before the steak is finished, add the butter to the pan. Smash the garlic clove and add it to the pan, along with the thyme. Use a metal spoon to baste the steak for about one minute.
- Transfer the steak to a cutting board to rest, topped with the garlic and thyme.
- Meanwhile, return the pan to medium-high heat. Add the mushrooms and saute for about 2 minutes, stirring or tossing from time to time.
- Deglaze the pan with the alcohol and cook until the pan is almost dry. Add the cream and bring to a boil. Stir in the Truffle Carpaccio and season the sauce with Balinese Truffle Salt to taste.
- Slice the steak, sprinkle a little Balinese Truffle Salt on top to finish, cover with the mushroom sauce, and enjoy!
