Ingredients 🍲
1 pound pork tenderloin ❄
- 1 each lemongrass ❄
- 1 head garlic ❄
- 1 teaspoon black pepper
- 2 ounces soy sauce ❄
- 2 ounces fish sauce ❄
- 2 tablespoons honey
- ½ cup canola oil
1 large carrot ❄
- 1 small daikon radish ❄
- 1 cup rice wine vinegar
- ¼ cup water
- 1 cup granulated sugar
- 1 packet Balinese truffle salt
- ¼ cup ice cubes
1 each jalapeno ❄
- ½ bunch cilantro ❄
- ⅓ cup Kewpie mayo ❄
- 1 ½ ounces sriracha
- 2 ounces Maggi seasoning ❄
- 2 each demi baguettes

Slice the pork tenderloin into thin medallions.
- Slice the lemongrass. Mince some garlic – measure with your heart, of course.
- In a mixing bowl, whisk together the minced garlic, the sliced lemongrass, black pepper, soy sauce, fish sauce, and 2 tablespoons of honey. Add the sliced pork and mix well to coat.
- Cover with plastic wrap and store in the refrigerator.
PREP 🔪
Preheat the oven to 350 F.
- Cut carrot and the daikon radish into matchsticks.
- Combine one cup rice wine vinegar, one cup sugar, a quarter cup of water, and a pinch of Balinese Truffle Salt in a small pot. Bring up to a boil and then cool down by adding ¼ cup of ice cubes. Then drop in your matchstick carrot and daikon and let them steep. These are the pickled vegetables – extras can be saved in the fridge for a couple weeks!
- Slice the jalapeno.
- Pick the cilantro.
- Whisk together the kewpie mayo and the sriracha. Add Maggi seasoning to taste. This will be our spread for the bahn mi
HOW TO COOK 🍳
Place the baguettes onto the sheet tray, bake for 5-10 minutes at 350F until they are crisp and warm.
- Heat the cast iron pan over high heat. Now is the time for those kitchen vents!
- Add the canola oil to the pan and wait until it just begins to smoke.
- Add the marinated meat to the pan and sear until cooked through, stirring occasionally. Do not burn the marinade.
- Chef snack: taste the meat, add salt if necessary.
- Slice the baguette and spread with the spicy mayo. Add the pork, pickled veggies, jalapenos, and cilantro. Dig in chef! You earned it :)
