Tips from the Chef: Red Wine-Braised Short Ribs
Alongside pommes fondant is my absolute favorite way to serve this dish, but if you're looking for a way to mix things up next time--or a slightly lighter option for summer--roasted asparagus, oven-dried tomatoes, or braised sweet carrots are also an absolutely delicious pairing for these decadent short ribs.

Simple Roast Asparagus
1 bunch asparagus
1/4 cup olive oil
Balinese Truffle Salt (or substitute with kosher salt)
Freshly ground black pepper
Preheat your oven to 425F.
Prepare the asparagus by snapping off the woody ends.
Toss with the olive oil and season with salt and pepper.
Spread onto a sheet tray and roast until tender, about 5-7 minutes.
Serve on top of risotto or alongside meat or fish.
