Your kit included my Truffle Gastrique. A gastrique is essentially a reduction of honey and vinegar that can be infused with different flavors. While this calls for truffle, you can substitute alliums or liquor or even fruit - get creative and play with different flavors depending on the dish.
Here's the recipe:
In a small pot on low heat, melt together 2 tablespoons wildflower honey and 2 tablespoons sherry vinegar. Once melted, remove from heat and stir in 1/2 teaspoon of chopped Truffle Carpaccio.
