How to Fry Shallots

Fried shallots are like Balinese Truffle Salt: sprinkle on just about anything savory to instantly make your dish more delicious. Making them in simple, and just requires a careful eye, a few ingredients you likely have on-hand, and some practice: 

  1. Peel and thinly slice a shallot. 
  2. Heat 1 cup of vegetable oil in a small pan over medium heat. When the oil is hot, carefully add the shallots and fry, stirring, until GBD (Golden Brown Delicious).
  3. Use a slotted spoon to transfer to a paper-towel lined plate. Season with salt and set aside to cool.
Chef's Tip: Keep a careful eye on them! They keep cooking after you remove them from the pan and go from golden brown and delicious to burnt very quickly. Practice makes perfect on these!
