Steak Frites is a classic French dish served in brasseries all over the country. I learned to cook this dish when I was a young cook working back in Maine. We used to serve this dish as a special for the bar downstairs, and I'll never forget how delicious the combination of steak and truffle fries was. Our take on this classic is a pan-roasted flat iron steak, truffle oven steak fries, and truffle-carmelized onion jam. We are using flat iron, which is a cut of meat from the shoulder. It is very flavorful and tender at the same time with beautiful marbling. Sometimes called "the butchers cut", the flat iron was often a special cut of meat that the butcher would save and bring home to his family.
