Flat Iron Steak and Frites with Truffle & Caramelized Onion

Steak Frites is a classic French dish served in brasseries all over the country. I learned to cook this dish when I was a young cook working back in Maine. We used to serve this dish as a special for the bar downstairs, and I'll never forget how delicious the combination of steak and truffle fries was. Our take on this classic is a pan-roasted flat iron steak, truffle oven steak fries, and truffle-carmelized onion jam. We are using flat iron, which is a cut of meat from the shoulder. It is very flavorful and tender at the same time with beautiful marbling. Sometimes called "the butchers cut", the flat iron was often a special cut of meat that the butcher would save and bring home to his family. We want to share this exceptional cut with our Truffle Shuffle family, so please join us in cooking the perfect Steak Frites!
