Tips from the Chef: Sautéed King Salmon
For this experience, we'll be focusing on how to best draw out the flavors of a beautiful piece of fish. The sauce is light, fresh, and delicious: the perfect accompaniment for the simple luxury of a nice king salmon. We will cover everything you need to know during class, but here are my tips for the next time you cook this recipe!
Tips:
- Don't forget to always temper fish before cooking: it will prevent the fish's interior from being too cold to cook evenly throughout.
- Garlic burns easily. When cooking the thinly sliced garlic, be sure to stir often and keep an eye on things.
Suggestions for serving:
- Alongside a simple green salad, gently dressed with a lemon vinaigrette
- Grilled asparagus
- Sweet summer peas
